Are you gluten-free and miss breadcrumbs as much as I do? I thought so! Here is an easy, and frugal, replacement for those expensive gluten-free breadcrumbs – that is, if you can find them at all. I buy the cheapest brand of no-name plain corn flakes and throw them in a gallon-sized freezer bag. Squeeze all the air out and seal the bag. Then, take your favorite rolling pin and crush those flakes. Even better, annoy all your family and neighbors by taking your aggressions out on that poor, defenseless freezer bag. Store crumbs in an airtight container. I love to coat chicken or pork chops with them and bake in the oven. I also season the “bread” crumbs with garlic powder, onion powder, salt and some Parmesan cheese to give it a little oomph. Enjoy!
